韓式叉燒飯-Korean style CharSiu with Rice(特級梅肉凍肉)

- 梅肉扒(Pork Butt)350g
- 飯(Rice)2人份
- 大蔥(白部分,White Part of Green Onion)4cm
- 調味料(醬汁):
- 醬油(Soy Sauce)30g
- 蠔油(Oyster Sauce)15g
- 蜜糖/低聚糖(Honey/올리고당)30g
- 切碎的生薑(Minced Ginger)1/2湯匙
- 切碎的大蒜(Minced Garlic)1/2湯匙
- 料酒(Cooking Wine)30g
- 胡椒(Pepper)2.5g
- 水(Water)240g
- 乾紅辣椒(Dried Red Chili Pepper)1個

- 調味料(醬汁)製作:將醬油、蠔油、蜜糖/低聚糖(Honey/올리고당)、切碎的生薑、切碎的大蒜、料酒、胡椒、水和乾紅辣椒混合在一起。

- 大蔥(白部分):切成細絲,用冷水浸泡5分鐘以去除辣味。
3. 烹飪
- 第一步:在小火上預熱鍋,倒入調味料小火加熱,再放入梅肉後中小火煮熟。一面微微煮至焦黃再翻轉以確保調味料在肉中分佈均勻。
- 第二步:當肉煮熟時,不要將鍋中的調味醬汁全部煮乾,應取一勺醬汁撒在飯上。這樣可以使飯保持濕潤並有調味醬汁的味道。
- 第三步:當調味醬汁的水分幾乎煮乾時,關火,將肉切成1厘米的厚度。
- 第四步:將切片的肉和蔥絲放在裝飯的碗上。

Seasoning (Sauce):
- Soy Sauce (30g)
- Oyster Sauce (15g)
- Honey/올리고당 (30g)
- Minced Ginger (1/2 tablespoon)
- Minced Garlic (1/2 tablespoon)
- Cooking Wine (30g)
- Pepper (2.5g)
Water (240g) - Dried Red Chili Pepper (1pc)
Preparation
Sauce Preparation: Mix soy sauce, Honey/올리고당, syrup, minced ginger, minced garlic, cooking wine, pepper, water, and dried red chilli pepper together.
Rice: Keep warm.
White Part of Green Onion: Cut into thin strips and soak in cold water for 5 minutes to remove spiciness.Cooking
Step 1: Preheat a pan over low heat, pour in the seasoning, and heat gently. Add the pork butt and cook over medium-low heat until done. Slightly cook one side until golden brown, then flip to ensure even distribution of the seasoning in the meat.
Step 2: When the meat is cooked, do not dry out all the seasoning sauce in the pan; take a spoonful of sauce and sprinkle it over the rice. This keeps the rice moist and flavorful.
Step 3: When the seasoning sauce has almost dried up, turn off the heat and cut the meat into 1cm thickness.
Step 4: Place the sliced meat and onion strips in a bowl with rice.
